
Easter weekend has come and gone and yet despite the amount of sweet stuff I’ve crammed into my mouth the past three days somehow my house is still chock-a-block with the stuff. Gold bunny’s in varying states of deformity lay discarded with missing ears and broken bums, unopened Easter eggs sit neatly stacked in their boxes and my biscuit tin looks like the Easter bunny threw up in there. Easter has come to be a time for us all to gently loosen our waistbands in preparation for consuming an inordinate amount of creamy, tempting and unbelievably sickly chocolate in one relentless stream. And while yesterday swathed in sweat pants and baggy tees it seemed like such a good idea, today my jeans fit a little tighter and the thought of cream eggs for breakfast has my stomach doing somersaults.
So in a bid to rid myself of the Easter aftermath I have one of two options. One, bag it up and dump it; or two, get to work in the kitchen. As I don’t believe in waste and secretly fancy myself as a bit of a Nigella Lawson character, I’ve chosen the latter and taken to the kitchen, spoon in hand, mixer at the ready to melt down my leftovers and give them a new lease of life. And once my reworked goodies are complete I will palm them off on unexpecting friends and colleagues so that I myself don’t have to endure yet more calories!
Mini Easter Cheesecakes
This is a great one because these little babies can be a dinner party saviour. Quick and easy to make these cheesecakes can even be frozen for a later date. Simply bash up all those leftover biscuits and cookies for your base and mix broken chocolate into cream cheese for your topping. Adorn with caramel filled chocolate eggs to give these mini puds the extra wow factor.
Caramel Easter Muffins
Looking for a treat that’s a little bit different? Well look no further. These muffins with a hidden centre of caramel Easter egg are just the right side of naughty. They are also perfect for when your girlfriends pop over for a coffee and a catch up.
Chocolate Birds Nest
It’s an oldie but boy it’s a goodie. This is one you might want to get the kids involved with, so next time you find yourself lumbered with little ones grab a box of Rice Krispies and hey presto you’re baking! They keep for ages in airtight tins and make great lunch box or party snacks too.
Easter Rocky Road
You can’t beat a recipe that calls for everything to go into one big bowl. With rocky road there are no rules! Just bash it up and bung it in, smother with melted chocolate and behold the king of all Easter leftovers. Word to wise you might not want to give this one away – It’s just to good!
